Sqirl made this jam in 2 batches: the first with GG1 (early harvest) cherries from Murray's, and the second with Black Tartarian (later harvest) cherries from Andy's Orchard. This medley is quite the technical feat! Cherries and strawberries have the least amount of pectin, so it takes careful presence and precision to make sure the texture is just right.
GG1 cherries have super dark skin with bright red flesh and a plump round shape and are insanely delicious, with a juicy crunch.
B.T. cherries are small and soft, but deep purple-black. Andy holds off on water before harvest, so that their Tartarians tighten up and get firmer, and the flavor gets more intense. Very dark and ripe. Two weeks and then...done.
Albion strawberries, relatively new California hybrids, are ever-bearing and sweet, firm & bright red and are thus perfect for this spread. This year the Albions are from Sqirl's good friend Rick at Rick's Produce.
